Peach Cobbler Recipes

Preheat oven to 425F.


In a medium saucepan add the chopped peaches with all the filling ingredients except the lemon juice. Bring to a boil and remove from the heat. Add the lemon juice. Spray cooking spray in a 9” baking pan or casserole dish and fill with the cobbler filling.


Sift your dry ingredients into a large bowl to prepare the biscuits. In a smaller bowl add your soy milk and vinegar until the mixture thickens slightly. Now blend in oil. Using a fork add the wet ingredients to the dry and stir until well-mixed. Using a table spoon drop the dough mixture onto the peach filling in the pan. Bake for 18-22 minutes. Your dish be a golden brown on top and you can test the biscuit by using a toothpick and inserting it into the biscuit. The toothpick should come out clean.
